San Marzano is the classic Italian paste tomato, originally from the volcanic soils near Naples. It's an heirloom that's been grown since the early 1900s and is widely considered one of the best sauce tomatoes in the world. The fruits are elongated and plum-shaped with thick, meaty walls, very few seeds, and a sweet flavor with low acidity. It's also the parent variety that the common Roma tomato was eventually bred from.
These are indeterminate plants, so they'll keep growing and producing all season long until frost. They do need sturdy support since the vines get tall and put out a heavy crop. San Marzano takes about 75 to 85 days from transplant to harvest. If you make your own tomato sauce, salsa, or paste, this is the variety to grow. The dense flesh means you spend way less time cooking the water out compared to juicier tomatoes. They're also great for canning, drying, or just slicing fresh onto a sandwich.
